Citric acid monohydrate 24 000 kg, commonly used in food products (code E330) as an acidity regulator and thus an agent extending product shelf life. It is not a preservative but it increases the stability of some vitamins and nutrients by reducing the pH. Citric acid is an organic compound from the group of carboxylic hydroxy acids, obtained through chemical synthesis or through citric fermentation of purified sugar or starch hydrolysate in the presence of mould cultures. There is no confirmation of the reports on its carcinogenic effects.
